  • 1 can (15 oz) organic chickpeas, drained and rinsed
  • 2 tsp smoked paprika
  • 1 tbsp extra virgin olive oil
  • 4 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp fresh chives, chopped
  • 1/4 cup cultured buttermilk
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the drained chickpeas dry with a towel. In a bowl, toss them with olive oil, smoked paprika, salt, and pepper until evenly coated.
  3. Spread the chickpeas on a baking sheet lined with parchment paper and roast for 25-30 minutes until golden brown and crunchy.
  4. While the chickpeas roast, whisk together buttermilk, chives, lemon juice, salt, and pepper in a small bowl until smooth.
  5. In a large bowl, combine spinach, halved cherry tomatoes, sliced red onion, and roasted chickpeas. Drizzle with the buttermilk chive dressing before serving.
