  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 ripe avocados
  • 4 large flour tortillas
  • 1 cup salsa (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded romaine lettuce
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  1. Heat olive oil in a skillet over medium heat. Season chicken breasts with cumin and chili powder, then add them to the skillet.
  2. Cook chicken for about 6-7 minutes per side until golden brown and cooked through. Remove from heat and let cool slightly before shredding.
  3. While the chicken cools, chop avocados and shred lettuce.
  4. Assemble each burrito by laying out a tortilla and adding shredded chicken, avocado, salsa, cheese, and lettuce in the center. Fold tightly.
  5. Cut burritos in half to serve with extra salsa on the side.
