Perfect for weeknight dinners or meal prep, this recipe is not only easy to make but also customizable to suit your taste. With each bite, you’ll experience a delightful explosion of flavor, making it an instant favorite for family gatherings or casual get-togethers.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh cilantro, chopped
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 4 garlic cloves, minced
  • 1 cup jasmine rice
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping cilantro, zesting the limes, and mincing the garlic.
  2. Marinate chicken by mixing lime juice, minced garlic, cumin, chili powder, salt, and pepper in a bowl. Coat chicken and let sit for at least 30 minutes.
  3. While the chicken marinates, rinse jasmine rice under cold water until clear and cook according to package instructions (15-20 minutes).
  4. Heat olive oil in a skillet over medium-high heat. Sear marinated chicken for about 6-7 minutes on each side until golden brown and cooked through (165°F internal temperature).
  5. Allow chicken to rest before slicing into bite-sized pieces.
  6. To assemble, layer cooked rice in bowls, top with sliced chicken, drizzle with remaining marinade, and garnish with chopped cilantro.
