  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 4 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp chili powder (adjust to taste)

Instructions

  1. In a bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper until well combined.
  2. Place chicken thighs in a resealable plastic bag or bowl; pour marinade over them. Seal tightly and refrigerate for at least 30 minutes or overnight for best flavor.
