Ingredients

  • 8 oz spaghetti or linguine
  • 2 large fresh lemons (juice and zest)
  • 3 cloves garlic (minced)
  • 3 tbsp extra virgin olive oil
  • ½ cup grated parmesan cheese
  • ¼ cup fresh basil or parsley (chopped)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve ½ cup of cooking water before draining.
  2. In a large pan over medium heat, warm olive oil and sauté garlic until fragrant (about 1 minute).
  3. Add lemon juice and zest to the pan, stirring to combine.
  4. Toss the drained pasta into the pan with the lemon sauce, mixing well.
  5. Stir in grated parmesan cheese, adjusting consistency with reserved cooking water as needed.
  6. Remove from heat and add fresh herbs before serving.
