  • 2 tbsp Tajín seasoning
  • 2 fresh jalapeños (sliced)

  • 6 cups romaine lettuce (chopped)

  • ½ cup grated Parmesan cheese
  • Juice of 1 lime

Instructions

  1. Rinse and pat dry the chicken breasts. Season generously with Tajín.
  2. Heat a grill or skillet over medium-high heat with olive oil. Cook chicken for 7-8 minutes per side until fully cooked.
  3. Sauté sliced jalapeños in a separate pan until slightly softened.
  4. If using fresh corn, boil it for about 5 minutes until tender; drain if canned.
  5. In a large bowl, combine chopped romaine, sliced chicken, sautéed jalapeños, and corn. Toss with Caesar dressing.
  6. Squeeze lime juice over the salad and sprinkle with Parmesan before serving.
